Lonestar Vegetable & Brown Bean Soup with Tortilla Chips
Serves 4 – 6
Time: Prep: 10 mins; Cook Time: 30 mins
1 Tbsp (15 ml) olive oil
1 Tbsp (15 ml) olive oil
1 onion, chopped
1 Tbsp Lonestar’s Leap blend
2 cups (500 ml) vegetable broth
2 cups (500 ml) water
1 can (398 ml) brown beans in tomato sauce
1 cup (250 ml) tomato sauce
2 cups (500 ml) corn – fresh, frozen or canned
2 cups (500 ml) green beans – chopped to 1” length – fresh, frozen or canned
1 cup (250 ml) diced tomatoes, undrained
Toppings (to your taste)
1 cup (250 ml) Cheddar cheese, grated
8 corn chips
4 Tbsp. (60 ml) cilantro, chopped or any other herbs or greens of your choice
Slice jalapenos (for you heat lovers!)
Limes, cut in quarters
Instructions:
- In a large pan heat olive oil over medium-high heat. Add onion and cook for 3 minutes until translucent.
- Mix all ingredients (other than toppings) together in a pot over high heat. Bring to a boil.
- Lower the heat and simmer for 30 minutes.
- To serve, top with crumbled tortilla chips, grated cheese, cilantro and jalapenos. Finish with a squirt of lime.
