Lime-Infused Cilantro
Creating this sauce was inspired by a love for the bright, fresh flavours of summer and the idea came to me one day as I experimented with different ways to use up the bounty of cilantro that grew in my garden. Ingredients
- A handful of washed fresh cilantro (stems included)
- Juice of 1 lime
- A handful of raw, unsalted cashews
- ⅓ cup of warm water
- 1 tsp of salt (adjust to taste)
- 1.5 – 2 tsp of The Spice Who Loved Me
- A dollop of mayonnaise (optional; use veganaise for a vegan version)
