Sumac, a member of the cashew family, is grown in the Middle East and Mediterranean. It’s related to but wildly different from the one growing in your backyard! An essential part of Arabic and Lebanese cooking, it has a distinctive tangy, lemony flavour and a spicy, earthy, woody aroma. The shrub’s red berries are dried and ground into a coarse powder, to add a gorgeous pop of brick-red colour to any food.

Sumac adds all the zip of lemon zest or lemon juice, without the bother of the messy liquid. Add it to dry rubs, marinades, and dressings. It pairs well with vegetables, grilled lamb, chicken and fish. And it’s lovely sprinkled over food just before serving.
