Green Cardamom is a versatile spice that lends itself to both sweet and savoury dishes. The Queen of Spice, as it is oft referred to, is widely known to bakers, and is a companion to cinnamon, nutmeg and cloves in baker’s recipes. Green Cardamom seeds can be used whole in jams and pickles and add a delicious sophistication to coffee, tea or fruit lassies, meats and vegetables, too.
If you like the flavour but prefer to avoid the seeds, use a small piece of cheesecloth to create ‘Bouquet Garni’ (a small bundle of herbs and spices).
